Japanese foragers revered it so much they danced for joy at its sight and named it the "dancing mushroom." One of the world's most prized culinary finds, Maitake contains a compound found nowhere else in the natural world.
In Japanese folklore, the Maitake mushroom got its name — mai meaning dance, take meaning mushroom — because foragers would literally dance with joy upon discovering one in the wild. But what sounds like an exaggeration makes sense once you consider how rare, delectable, and medicinal the prized Maitake mushroom truly is.
Maitake (Grifola frondosa) is simultaneously one of the most delicious most pharmacologically interesting mushrooms in the natural world. It contains a compound, Grifolan that's only found in Maitake mushrooms, and the research into what this fascinating compound does in the human body is one of the more compelling stories in medicinal mushroom science.

What Is Maitake?
Maitake is a large, soft-fleshed polypore mushroom that grows in temperate hardwood forests across North America, eastern Canada, Japan, China, and Europe. In the United States, it's most commonly found in the Appalachian region growing at the base of oak trees in late summer and fall, sometimes in clusters weighing 20 pounds or more.
You may know it by its other common name: Hen of the Woods. The overlapping, wavy gray-brown caps fanning out from a shared base do bear a passing resemblance to the ruffled feathers of a roosting hen. The caps range from 2 to 10 centimeters in diameter, darkening with age and sometimes staining yellow. The underside is covered in tiny white pores that release white spores. The flesh is white, firm when young, and softer as the mushroom matures.
As a culinary mushroom, it's genuinely exceptional. Rich, earthy, umami-laden and meaty with a texture that holds up beautifully to high heat, it's considered a "choice edible" in foraging terminology, meaning it's not just edible but actively sought for the table. Maitake tempura, Maitake risotto, and Maitake sautéed in butter are all as good as they sound.
Nutritionally, Maitake is dense with immune-modulating beta-glucans, Vitamins B and C, copper, potassium, fiber, and amino acids, while simultaneously being fat, sodium, and cholesterol free. Yet Maitake's nutritional profile is a footnote compared to its medicinal value.
The Star Compound: What Is Grifolan?
Grifolan is a specific type of beta-glucan polysaccharide found exclusively in Maitake mushrooms. Like the beta-glucans in Reishi and Turkey Tail, Grifolan interacts directly with the immune system. Yet its unique mechanisms and pathways are distinct enough that researchers have given it its own name and devoted entire bodies of research specifically to its effects.
At its core, Grifolan works by activating key immune cells — macrophages, T-cells, and natural killer (NK) cells — that form the frontline of the body's defense against infections, disease, and abnormal cell growth. What makes it particularly interesting is the breadth of downstream effects that activation produces, from immune modulation to metabolic regulation to cardiovascular support.
A meta-analysis of 24 independent studies found that Grifolan inhibited tumor growth, improved tumor remission rates, and enhanced immune cell function across multiple cancer types.

The cancer research around Grifolan is among the most developed of any single mushroom compound. One study found that Grifolan lessened the growth of cancerous cells and significantly increased the proliferation of NK cells in cancer patients, enhancing the body's ability to destroy both cancer cells and virally infected cells. A separate meta-analysis examining 24 independent studies on Grifolan's anticancer effects found that it inhibited tumor growth, improved tumor remission rates, and enhanced overall immune cell function across multiple cancer types.
It's worth being clear about what this research means and what it doesn't. These findings are primarily from in vitro and animal studies, with some human clinical data intermixed in there. Grifolan is not a cancer treatment. But the consistency of findings across two dozen independent studies, combined with the plausibility of the immune-activation mechanism, has made Maitake one of the most actively studied mushrooms in oncology-adjacent research, alongside Reishi and Turkey Tail.
Maitake is also one of several medicinal mushrooms being studied for potential use as an adjunct therapy alongside conventional cancer treatment, with some research suggesting it may help mitigate the immune-suppressing side effects of chemotherapy.
Blood Sugar
Blood Sugar and Insulin Regulation
This is where Maitake stands apart from every other medicinal mushroom. No other medicinal mushroom has produced research on blood sugar regulation as consistent or as specific as the data on Grifolan.
In one study, Grifolan significantly reduced blood glucose levels in diabetic mice, suggesting a direct hypoglycemic effect with potential applications for human diabetes management. In another, Grifolan was found to inhibit alpha-glucosidase, an enzyme responsible for breaking down complex carbohydrates into glucose in the digestive tract. By slowing that conversion, Grifolan helps blunt post-meal blood sugar spikes, which is one of the primary targets of several Type 2 diabetes medications.
A third line of research has found that Grifolan may support insulin sensitivity, i.e. body's ability to use insulin effectively, which addresses a core mechanism of Type 2 diabetes at the cellular level rather than just managing its downstream effects.
For people managing blood sugar through diet and supplementation, the research on Maitake is among the most directly applicable in the medicinal mushroom world. On cholesterol, studies have found that Grifolan helps lower total cholesterol and LDL ("bad") cholesterol levels while leaving HDL ("good") cholesterol unaffected, a favorable profile that mirrors what pharmaceutical statins aim to achieve, though through different mechanisms and at a fraction of the potency. On blood pressure, Grifolan appears to promote vasodilation, the relaxation and widening of blood vessel walls, which reduces the resistance the heart pumps against and thereby lowers blood pressure. This effect, combined with the cholesterol findings, makes Maitake one of the more cardiovascularly relevant medicinal mushrooms in research literature.

Though not on the level of Chaga's antioxidant levels, Maitake is a good source of antioxidants that can neutralize free radicals, a class of unstable molecules that drive oxidative stress, cellular aging, and chronic inflammation. How to Identify Maitake in the Wild
If you're a forager, Maitake is one of the more rewarding finds in eastern North American hardwood forests. A few identification notes: Maitake grows at the base of living or dead hardwood trees — most commonly oaks, but also elm, maple, blackgum, and beech. It appears in late summer through fall, often returning to the same tree year after year. The overlapping wavy caps are gray-brown to dark brown when young, lightening and sometimes yellowing with age. The underside shows white pores rather than gills. The base is thick, white, and branching.
One important note: Maitake can be confused with Berkeley's Polypore (Bondarzewia berkeleyi), which grows in similar locations. Berkeley's Polypore is technically edible, though it is much tougher than Maitake and lacks Maitake's medicinal profile. When in doubt, consult a field guide or an experienced local forager before consuming any wild mushroom.

Grifolan is a water-soluble polysaccharide, which means it's accessible through hot water extraction.
